Description

The method is applicable to the determination of total α-galactosides and the estimation of raffinose in beet molasses, in juices and syrups from beet processing and beet sugar.

The raffinose present is hydrolysed by an enzyme to D-galactose which is then oxidised with nicotinamide-adenine dinucleotide (NAD): the NAD being reduced to NADH. The quantity of NADH formed is measured spectrophotometrically.

The absolute difference for results obtained under repeatability conditions should not be greater than 3 g/100 g.
