Description

This method is suitable to determine the polarimetric sucrose content of the sugar component of powdered sugars.

The procedure is carried out in a number of steps by first determining the amount of insoluble anti-caking agent present, then determining the moisture content of the sample. The results of these two steps allow a sample to be prepared containing 26 g of sugar for polarimetry.
