Description

This method is suitable for the determination of Reducing Sugars in cane raw sugars.

The test sample containing reducing sugars is heated to the boiling point with an excess of a solution containing copper II, which is reduced.

Residual copper II is then determined iodometrically.

For raw sugars containing between 0.18 g/100 g and 0.74 g/100 g of reducing sugars the absolute difference between two results obtained under repeatability conditions should not be greater than 0.02 g/100 g and under reproducibility conditions not greater than 0.05 g/100 g.
